Nghiên cứu được thực hiện với mục
đích ứng dụng một phương pháp kết hợp đa công cụ trong đánh giá mức độ chấp nhận
(thị hiếu) thực phẩm ở trẻ em, nhằm có cái nhìn toàn diện hơn về thị hiếu của
nhóm đối tượng đặc biệt này. Tổng số 100 trẻ em 8 – 12 tuổi đã tham gia nghiên
cứu trên sản phẩm thức uống dinh dưỡng từ lúa mạch. Một mặt các em được yêu cầu
quan sát bao bì của sản phẩm để đánh giá mức độ ưa thích kì vọng đối với sản phẩm
và đánh giá mức độ ưa thích tổng thể đối với sản phẩm (tương đương quá trinh
tiêu dùng). Kết quả cho thấy: Sự đồng thuận giữa mức độ ưa thích kì vòng và ưa
thích kì vọng và ưa thích tổng thể; Trẻ em 8 – 12 tuổi có khả năng hiểu thang
đo thị hiếu 7 mặt cảm xúc, và hiểu các câu hỏi độc lập về mùi và vị như người lớn.
Kết quả này mở ra hướng nghiên cứu trực tiếp và toàn diện trên đối tượng trẻ nhỏ,
khi mà trẻ em ngày càng là khách hàng mục tiêu của rất nhiều chủng loại sản phẩm
thực phẩm.

Using a multiple tool method to evaluate children’s preference on nutritional drink from barley added with cocoa flavour

The aim of this study was to apply
a method of combining multi-tools to evaluate food preference in children, in
order to have a comprehensive view of the preference of this particular target
group. There were 100 children at 8 – 12 years old participated in research on
nutritional drinking products from barley. They were asked to observe the
packaging of the product to assess the expected liking (equivalent to the
observation and purchase process). On the other hand, the children tasted the
product and assessed the overall perceived liking (equivalent to the consumption
process). The results showed that: There was a consensus between expected
liking and overall perceived liking and overall perceived liking; Children at 8
– 12 years old were able to understand the scale of 7 – sided emotional face,
and understand independently questions about smell and taste like adults. This result
opens a direct and comprehensive approach on studying of young children
preference, when children are in-creasingly targeted customers of many types of
nutritional food products.
